Remove excess moisture from fillets and season to taste with seasoning salt or regular salt and pepper. Place fillets in a bag with pancake flour, (NOT PANCAKE MIX) shake bag and coat fillets thoroughly. Fry in hot peanut oil. A different and delightful taste!

Broiled on the Grill
Marinate Crappie fillets in lemon juice, your favorite wine, or beer overnight in refrigerator. Grill over hot coals basting frequently with a mixture of melted butter and your taste in spices. ( Garlic salt, Louisiana Red Hot sauce, regular salt and pepper, etc. ) Length of cooking time varies on the distance the fillets are from the fire, and the thickness of the fillets. Fillets should flake easily with a fork when done.

Fish filletsLemon pepper seasoning
all-purpose flourDried parsley flakes
mayonnaiseWater
1.Heat oven to 350 F.
2.Coat fish with flour, shaking off excess. Spread mayonnaise evenly over fish. Sprinkle with lemon pepper and parsley. Place in baking pan large enough to hold in a single layer. Carefully pour water around fish to 1/8" depth.
3.Bake 15 to 20 minutes or until fish flakes when tested with fork and top is light golden brown.

BAKED PECAN CRUSTED CRAPPIE
6 7- to 8 oz. Crappie fillets3/4 C. Milk
2 cups bran flakes cereal, coarsely crushed2 extra large eggs
1- 1/4 C. fine, dry bread crumbs3/4 C. all-purpose flour
1 C. toasted chopped pecans½ tsp. Pepper
1 tsp. Salt
1.Heat oven to 350 F. Lightly grease shallow baking pan large enough to hold fish in a single layer.
2.In shallow bowl, combine bran flakes, crumbs, pecans, salt, and pepper. Mix well. In separate shallow bowl, whisk together milk and eggs until well blended. Coat fish with flour, shaking off excess. Dip into milk mixture, then into breading mixture, coating evenly and pressing breading into fish. Place fillets in baking pan.
3.Bake 10 to 15 minutes or until fish flakes when tested with fork.
